
Berries for breakfast: Mother’s Day recipes for the perfect breakfast in bed
Breakfast is the most important meal of the day and almost every day of the year, mums make sure their kids are getting the perfect balance of nutritious and delicious breakfast options.
So, this Mother’s Day, Love Fresh Berries is encouraging kids to prepare a healthy breakfast spread for their mothers as they treat mum to breakfast in bed and return the favour.
From a refreshing strawberry smoothie to a blueberry French toast or an easy-to-make raspberry and chocolate granola stack, these recipes are easy to make for little hands to deliver the perfect breakfast or brunch in bed.
Rhiannon Lambert BSc MSc RNutr, an award-winning nutritionist and mum-of-two, says: “Fresh berries are nutrient powerhouses that can easily be incorporated into our daily routines.
“They contain antioxidants and vitamins that support heart health, the immune system, and skin health. They are also a source of dietary fibre, which helps our gut microbes flourish.
“Berries are a great choice for a family breakfast. You can sprinkle them on your porridge or yoghurt, add them to your cereal, or even spread them on toast. And if it’s the kids in the kitchen for Mother’s Day breakfast, berries are a great way for them to get creative – and probably messy – while learning all about what makes an ideal, healthy start to the day.

Strawberry Smoothie
Serves 1
Ingredients:
- 150g strawberries
- 1 medium ripe banana, peeled
- 1 scoop softened vanilla ice cream
- 1 tsp runny honey (optional)
- 4 tablespoons orange juice
Method:
- Freeze the strawberries on a baking tray lined with baking paper for about 1 hour. If you don’t have time to do this you can just use them fresh.
- Whizz the frozen strawberries in a blender* or smoothie-maker together with all the other ingredients.

Blueberry-Studded French Toast
Serves 1
Ingredients:
- 2 eggs
- Pinch of cinnamon
- 2 slices of white bread
- A few blueberries
- Small knob of butter (or splash of olive oil)
- A generous glug of maple syrup
- Sprinkle of icing sugar
Method:
- Crack the eggs into a dish big enough to lay a slice of bread into. Beat the eggs and add a pinch of cinnamon.
- Push the blueberries into the bread using something thin like a chopstick so you don’t dent the bread too much. Lay the bread into the dish to absorb the egg mixture for about 10 seconds on both sides, then repeat with the second slice.
- Then, pan fry* in a lightly buttered/oiled pre heated frying pan for a few minutes on each side until the french toast is golden brown.
- Transfer to a plate, lightly dust with icing sugar, drizzle with maple syrup and garnish with a few more blueberries.
