
Recipe: Bonne Maman Bitter Orange Homemade Jaffa Cakes
Bonne Maman Bitter Orange Jaffa Cakes: For sweet and comforting, but still slightly elevated baked goods that spark a childhood memory, these homemade Jaffa cakes from Bonne Maman were a delicious option! The combination of sweet sponge, zingy jelly and thick, rich dark chocolate topping blended with their lovely Bitter Orange Marmalade was utterly delicious.
Ideal as a packed lunch box treat, after school surprise or even with afternoon tea, these were incredibly easy to whip up and tasted great; a truly exciting twist on the much loved classic store bought alternative. With that perfect blend of a sweet cake centre, zingy orange jelly and tangy orange in the marmalade there was that ideal orange chocolate balance!
Ingredients:
- 2 eggs
- 50g Caster Sugar
- 50g plain flour, stirred
- 1 packet of orange jelly cubes, chopped
- 1tbsp Bonne Maman Bitter Orange Marmalade
- 125ml boiling Water
- 200g Dark Chocolate, broken into pieces

Method:
1. Preheat the oven to 180ºc/350ºf/Gas Mark 4.
2. Place the eggs and sugar in a heatproof bowl over a pan of simmering water and beat continuously for 5 minutes.
3. Add the flour, still beating, until a batter forms.
4. Half-fill each well of a 12-hole muffin tin with the batter. Bake in the oven for 8 to 10 minutes, then set aside to cool in the tray.
5. To make the jaffa filling, mix together the jelly, marmalade and boiling water until the mixture is smooth. Pour into a shallow baking tray or dish to a depth of 1 cm. Set aside to cool completely, then chill in the fridge until set.
6. When the jelly has set and the cakes have cooled, cut circles from the jelly to fit on top of the cakes. Top each cake with a jelly circle, still leaving them in the tin.
7. Melt the chocolate in another heatproof bowl over a pan of shimmering water, stir well, then pour over the cakes. Set aside (still in the tin) until the melted chocolate has cooled and set, then remove from the tin and serve.
