
Christmas Chocolate Truffles

Equipment:
KitchenAid Artisan 4.7L Stand Mixer
KitchenAid Slicer and Shredder Attachment
Ingredients:
250g 60% dark chocolate
120g double cream
50g desiccated coconut
100g dark cocoa powder
Method:
- Connect the Slicer and Shredder attachment with the coarse shredding blade to the stand mixer. Grate the chocolate on speed 6
- Heat the cream over a medium heat
- until hot, but don’t let it boil, and pour over the chocolate and let it sit for 5 minutes, then stir until smooth
- Pour the truffle mixture into a shallow tray and refrigerate for 4 hours
- Toast the desiccated coconut on a medium heat and transfer to a shallow plate to cool
- Sieve the cocoa powder onto another plate
- Using a melon baller or a teaspoon, scoop out a small amount of the cooled truffle mixture and shape into a ball with a diameter of about 2.5cm. Roll half of the balls in the cocoa powder and half in the coconut
- Store refrigerated in an airtight container before you’re ready to gift wrap, or serve after dinner
