Scrambled Tofu Bagel

A golden glow meets a soft crunch in this Scrambled Tofu Bagel. Not just pretty to look at, it delivers real flavour without settling for basic. Inside, crumbled tofu dances in the pan, stirred with care, infused by gentle spices.

Toasted bagel holds it tight, shared space with rich spreads and bright, chopped herbs. One bite wraps it all together. Protein packs each piece, no dairy needed, room to tweak every time. Breakfast goals shift when you see what plants can do. Ideal for lazy Sundays, quick Tuesday a.m.s, or any time you want warmth without the guilt.

INGREDIENTS:

  • 4/5 sprays of The Groovy Food Buttery Flavour Spray
  • 150g/5½oz silken tofu 
  • ½ tsp garlic powder
  • 1½ tsp ground turmeric
  • ½ tsp smoked paprika
  • ½ tsp Dijon mustard
  • 150g/5½oz firm tofu
  • 2 seeded bagels, halved
  • salt and freshly ground black pepper

METHOD:

  1. To make the creamy tofu mixture, add the silken tofu, garlic powder, 1 teaspoon of turmeric, smoked paprika and mustard to a food processor and blend until creamy.
  2. Roughly crumble the firm tofu in a non-stick frying pan and 4/5 Sprays of The Groovy Food Buttery Flavour spray, with half a teaspoon of turmeric. Lightly fry for a few minutes before adding the creamy tofu mixture. Stir over a low heat and season generously with salt and pepper. 
  3. Toast the bagels and spread half of the avocado on each bagel. Add the tomatoes and a pinch of salt to each bagel. Spoon on the tofu mixture and garnish with the dill and a drizzle of sriracha. Enjoy!
