Easy Courgette Fritters 

 These tasty little green bites are simple to make and take just 20 minutes from prep to cook. They are perfect for a delicious summery starter or light supper and a big hit with kids! 

 Makes: 10 servings 

Prep time: 20 minutes 

Cook time: 35 minutes 

Equipment: 

KitchenAid 2.1L Food Processor 

Ingredients: 

1 large courgette 

Salt 

2 large free range eggs

125g plain flour 

½ tsp sesame oil 

2 tbsp vegetable oil 

Method: 

  • • Fit the KitchenAid Food Processor with the shredding disc. Cut the courgette to fit in the feed tube and process to 
  • shred. Transfer the courgette to a large bowl, sprinkle liberally with salt and set aside for 10 to 15 minutes. Drain well in a colander, pressing to remove excess liquid 
  • • Whisk the eggs, flour and sesame oil together in a large bowl. Stir in the courgette 
  • • Heat the vegetable oil in a large frying pan over a medium heat. Shape into walnut sized balls then flatten. Fry until golden brown and cooked through on both sides. Transfer to a serving plate and serve warm with fresh chilli jam
