Vegan chocolate truffles for your plant-based lover

These three-ingredient chocolate truffles are simply divine. As there are only three ingredients, you can add your favourite flavours and even a scoop of our Chocolate Protein Smoothie.

They’re ready in no time, but be warned if you are preparing them in advance: they are totally delicious and will disappear very quickly. Great for a pre-workout snack.

Ingredients

  • 2 tsp coconut oil
  • 280g dark chocolate, finely chopped
  • 8 tbsp full fat coconut milk
  • 1 scoop chocolate Protein Smoothie (optional)
  • Optional add ins: pinch salt, maple syrup, 1/2 tsp vanilla paste

Method:

1. Very gently heat the coconut milk in a saucepan. Once it becomes warm – but not boiling, you don’t want it to boil or bubble, else your mixture may split! – add the chocolate and allow to sit for a few minutes.

2. Stir the chocolate and coconut milk until melted and smooth, adding in flavourings and Protein Smoothie if using.

3. Place in the fridge to chill for a few hours, or until almost firm. Use a tablespoon to pick up the mixture, then roll into balls. Roll in cacao, melted chocolate, beetroot powder or chopped nuts, if using. Continue with the remaining mixture (place any that’s too squidgy back in the fridge), then eat immediately or store in the fridge.
